After graduating from Le Cordon Bleu Peru and with a Master Degree in Italian Cuisine at ICIF, Italy, I have accumulated over twenty years of experience in the culinary industry. In addition, I have acted as a brand ambassador, a gastronomic representative of Peru and a businessman. I am currently in charge of my own restaurants:
Cosme, Alado and Pánguche.

I have greatly enjoyed providing advice to various restaurants in several countries. i.e., Colombia, Chile, Central America and the United States, hoping to honor the gastronomic history of Peru in Latin America and the world.

The desires and emotions of my customers. They are the starting point and the engine of my actions. I try to treasure the good moments and recreate them in each dish, so that the experiences of the people who taste it are always the best. Hence, I am in constant search of how to improve what we already have in the most organic way possible, but without disregarding the technique.
